This recipe is a typical Spanish dish from a specific region in León which is known with the Spanish name of “maragatería”. This famous stew is composed of soup, chickpeas, cabbage (which can be changed for any other vegetable), potatoes and at least seven different kinds of meat. Contrary to the rest of stews, in this recipe the meat courses are served first (the normal is to serve the soup first, then the chickpeas with vegetables and finally the meat).
The mixture of the seven different types of meat is known with the Spanish name of “ración” or portion. To prepare the meat, you have to boil it slowly. Then you prepare the soup with this meat stock. Remember that the soup is served the last one. The vegetables and chickpeas are boiled separately, so the flavours are not mixed up.
The portion (or “ración”) has chorizo, Iberian pig’s snout and ears, shoulder, chicken, smoked meat, beef meat or chops. Meat is served in the first place.
Chickpeas are usually from Valdeviejas, Piedralba de San Cristóbal or Quintanilla de Somozas. They are served in second place, together with the cabbage and the potatoes (normally fried or boiled) but in different plates.
To finish with this exquisite recipe, you can try any Spanish dessert from the area, such as custard, or the “maragato” sponge cake.
